Oolong Tea is a type of semi-fermented tea. Oolong is a traditional Chinese type of tea somewhere in between green and black in oxidation. Oolong tea is prized for its body-slimming and digestive functions, as well as its great flavor.
The term "oolong" means black dragon in Chinese. In one legend, the owner of a tea plantation was scared away from his drying tea leaves by the appearance of a black snake; when he cautiously returned several days later, the leaves had been oxidized by the sun and gave a delightful brew.
Oolong tea is divided into sub-categories based on the tea plant variety, the the degree of enzymatic oxidation and the growing region. The production of authentic Oolong teas is restricted to a few geographic regions of China and Taiwan, where the proper tea plants and artisan techniques are found.
